  • 1 Can corned beef hash
  • 3 tablespoons water, plus more if needed
  • 4 eggs

Instructions
 

  • Heat a large skillet over medium-high heat.
    Add the canned corned beef hash and spread it evenly into a layer about ½ inch thick.
    Let it cook uncovered and undisturbed for approximately 10 minutes, or until the bottom is crispy.
    Push back one edge of the hash slightly to create a space for adding water later.
    Using a spoon, create four wells in the hash for the eggs. The wells don’t need to reach the bottom of the pan—just enough to keep the eggs contained.
    Crack an egg into each well.
    Pour 3 tablespoons of water into the cleared edge of the pan. Cover the skillet and reduce the heat to medium-low.
    Let the eggs poach, checking after 2 minutes. If needed, add another tablespoon of water to maintain steam. Cook for 3–4 minutes, depending on your preferred yolk consistency:3 minutes for runny yolks4 minutes for firmer yolks
