Ingredients
  

  • 2 ribeye steaks (8 oz each) (or preferred cut) 2 sprigs fresh rosemarySalt, to tasteBlack pepper, to taste
  • 1 lb Yukon Gold potatoes
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 sprigs fresh rosemary
  • Black pepper, to taste
  • 2 tbsp butter
  • Salt, to taste

Instructions
 

  • Prepare the Ingredients:Let steaks come to room temperature for 30 minutes before cooking.
    Season steaks with salt, pepper, and finely chopped rosemary.
    Wash potatoes, cut into bite-sized pieces, and toss with olive oil, salt, and pepper.Mince garlic and prepare rosemary for later.
    Cook the Potatoes: Heat a large skillet over medium-high heat and add olive oil.
    Add potatoes in a single layer and cook for 10-12 minutes, stirring occasionally, until golden and crispy.
    In the last minute, add minced garlic for extra flavor.
    Pro Tip: You can roast potatoes at 425°F (220°C) for 20-25 minutes if preferred.
    Sear the Steak: Preheat a cast-iron skillet over high heat until it’s smoking hot.
    Drizzle with olive oil and add steaks. Sear for 3-4 minutes on each side without moving them.
    During the last minute of cooking, add butter and fresh rosemary. Spoon the melted butter over the steaks.
    Pro Tip: Use a meat thermometer. For medium-rare, aim for 135°F (57°C); for medium, 145°F (63°C).
    Serve:
    Plate the potatoes and top with sliced steak.
    Garnish with additional rosemary and freshly cracked black pepper.

  • Swap Yukon Gold potatoes with red potatoes or sweet potatoes for a twist.
