How to Make Delicious Corn Nuggets at Home

Ingredients
  

  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • 1/2 tsp salt1
  • 2 large eggs
  • 1/2 cup whole milk
  • Optional: 1/2 cup shredded cheddar cheese (for cheesy variation)
  • Optional: 1 diced jalapeno (for spicy variation)
  • Vegetable oil for frying

Instructions
 

  • In a large bowl, combine the flour, cornmeal, baking powder, garlic powder, salt, and sugar.
    In a separate bowl, whisk the eggs and milk together. Pour the wet ingredients into the dry ingredients and mix until smooth.
    Stir in the corn kernels (and cheese or jalapenos if using). The batter should be thick but not too stiff.
    Heat oil in a deep pan to 350°F (175°C). Drop spoonfuls of the batter into the hot oil and fry in small batches.
    Fry the nuggets for 3-4 minutes, or until golden brown and crispy.
    Remove from the oil and drain on a wire rack.Serve hot with dipping sauces like ranch, honey mustard, or barbecue sauce.
