Ingredients
  

  • 1 loaf of crusty bread (sourdough or baguette)
  • 2 cups cooked and shredded chicken (rotisserie or homemade)
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)
  • 1 cup salsa (store-bought or homemade)
  • 1 can black olives, sliced
  • 1 jalapeno, sliced (optional)
  • Fresh cilantro for garnish
  • 1 avocado, diced
  • 1/2 cup sour cream
  • Lime wedges for serving

Instructions
 

  • Make the Bread Base: Preheat the oven to 350°F (175°C). Cut the bread loaf horizontally in half to create two open pieces. Place the bread on a baking pan and toast for about 5 minutes, until golden.
    Assemble the Chicken Mixture: In a bowl, mix the shredded chicken and salsa. If using canned chicken, drain it and combine with the salsa.
    Layer the Ingredients: Once the bread is toasted, evenly spread the chicken mixture over both sides. Top with shredded cheese, then sprinkle black olives and jalapenos on top.
    Bake to Perfection: Place the bread in the oven for 15–20 minutes, or until the cheese is melted and bubbly, and the bread edges are crispy.
    Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro and diced avocado. Serve with sour cream and lime wedges.

Notes

  • For a twist, try adding steak to the nacho mix.
  • For a more intense flavor, add adobo sauce to the chicken
