Ingredients

  • 4 cups (500g) bread flour or all-purpose flour
  • 1 1/2 cups (360ml) warm water or milk
  • 2 1/4 teaspoons (7g) active dry yeast or instant yeast
  • 2 tablespoons (25g) sugar or honey
  • 2 teaspoons (10g) salt
  • 2 tablespoons (30g) unsalted butter (softened)
  • 1 tablespoon Smoked Salmon Brine (for flavor)
  • Extra flour for kneading

Instructions

  • Activate the Yeast: If using active dry yeast, combine yeast, warm water (100°F), and sugar. Mix and let sit for 5-10 minutes. If using instant yeast, skip this step and mix it directly with the flour.
Combine Ingredients: In a large bowl, mix flour and salt. Make a well in the center and add the yeast mixture (or instant yeast with warm water/milk). Add butter and smoked salmon brine. Mix into a sticky dough.
Knead the Dough: Transfer the dough to a floured surface and knead for about 10 minutes by hand (or 5 minutes with a stand mixer). Add more flour if needed, but don’t overdo it.First Rise: Shape dough into a ball and place in a greased bowl. Cover and let rise for 1-2 hours until doubled in size.
Shape the Dough: Punch down the dough and shape it into a loaf. Place it seam side down in a greased loaf pan.
Second Rise: Cover and let rise for 30-45 minutes. Preheat oven to 375°F (190°C).
Bake: Bake for 25-30 minutes until golden brown and hollow when tapped. Internal temperature should reach 190°F (88°C).
Cool and Enjoy: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Use a thermometer to check internal temperature for perfect doneness.
  • For extra flavor, consider adding herbs like rosemary or thyme to the dough.
  • Let the bread cool completely to prevent it from becoming too soft when sliced.
