Ingredients

  • 1 large cucumber, thinly sliced lengthwise Optional: Sriracha, wasabi, or lemon juice for added flavor
  • 4 oz smoked or sushi-grade salmon, thinly sliced
  • 2 oz cream cheese or mashed avocado (optional)
  • Fresh dill or chives, finely chopped
  • Salt and pepper to taste
  • Optional: Sriracha, wasabi, or lemon juice for added flavor

Instructions

  • Prepare the Cucumber: Use a mandolin or sharp knife to slice the cucumber lengthwise into thin, even strips.
Add the Filling: Lay a strip of smoked or fresh salmon on each cucumber slice.
If desired, spread a thin layer of cream cheese or mashed avocado on the cucumber before adding the salmon.
Season: Sprinkle with dill or chives, and add a pinch of salt and pepper. For a spicy kick, add a touch of Sriracha or wasabi.
Roll and Secure: Gently roll up the cucumber slices with the filling inside. Secure each roll with a toothpick if needed.
Serve: Arrange the rolls on a serving tray. Garnish with extra dill, chives, or a drizzle of lemon juice for added freshness.

Notes

  • To make it keto-friendly, use avocado instead of cream cheese.
  • For a variation, add a slice of avocado with the salmon for extra creaminess.
  • Chill the rolls before serving for the best texture and flavor.
